Baked pau recipe

I tried to make my first siew pau on Saturday. It was not very difficult and tastes pretty nice too. I think anyone can be successful during the first try.

                                                                   
Ingredients.
500g of mince meat or cubed meat - well marinated with soya souce, sesame oil, cinnamon, kukurma powder, pepper, oil and water.

1 canned mushroom
1/2 canned green peas
2 sliced bombay onions

2 packet of blatter teig ( not sure what you call it in English)
4 eggs hard boiled skinned and cut to 6 pieces for each egg.
2 egg yolks.

Heat a few spoonful of oil in a wok. Stir fry the bombay onions, mushroom and mince meat. Add pepper, dark soya sauce and salt. When it is almost cooked add in the green peas. Set aside the fillings.

Pre-heat the oven at about 250 celcius.

Cut the blatter teig to half so that it is square. I have 6 pieces of blatter teig in each packet, so I have 12 when it is halved and having two packets makes it 12 square teig. Slightly roll the blatter teig by the side if it is not big enough. Put two spoonful and a piece of egg in the middle and pull the four edges together and press them close. Press and turn the 4 corners together to make them firmly wrap. Brush the surface with egg yolk. Arrage in tray and back for about 30-40 minutes. If the 'pau' is not yellow enough give another coating of egg yolks 20 minutes after baking.

I need to do two rounds of baking with 12 pieces each round. And the 'pau' turn out just nice :D
