after being "threatened" by tzeying[1], i think i better quickly write about our weekend "wantan mee" adventure to make her happy, and secondly to show off that i can also cook something
.
it all started after i bumped into a site where i have then downloaded the wantan noodle recipe... we have then decided to try it out during the weekend. So there we were, bought all the ingredients we need and started our experiment.
it was pretty simple. You only need to get the right amount of flour, egg, salt and water to start. That's it. no sweat. The one we tried was around 400g flour, 1 egg, some salt and around 150g water. That is enough wantan wrapper for almost 600g minced meat. Apart from the ingredients you of course need a pair of strong arms. Mine is considered as so so but still i managed to get things done
. So guys, don't start giving excuse say you cannot or dunno how.. that is so ah kua, kekeke.
The stuffing should consist of minced meat, sliced spring onion, oil, sesame oil, salt, light soya sauce, little water and pepper powder. If you wanna throw people a feast, put in shrimps. That will make everyone fight for the "special" wantans.
soooo... back to the cooking. You probably need some practices to get the right size. One main thing i learnt: it should be thin but still tangible. then you can have nice wantans that will not "burst" being overloaded. But of course, if you are those tamsim[2] people you get ready to find floating wantans without stuffings, and some meat balls floating in your soup
.
for noodle it is slight modification of the ingredients. I had about 500g flour, 3 egg yokes, salt and water together, and just have to mix them well, then roll them flat to about 5mm thick, then start cutting them. ta da! you have home made noodle within 30 minutes!
to cook them, you can prepare some nice anchovy soup. They are 200% better than any aji-no-moto powered soup i tell you. I would rather first cook the wantan in boiling water, and as soon as they float (yeah, as soon as they start to float) then transfer them to the anchovy soup. With this you might have less flour ended up in the soup you would like to drink.
'nuf said, i know you are already drooling at this point. So to make things worst, below are the result of our experiments:
and of course, we are not responsible for making you drool
.
note:
[1] she was telling "hey if you don't blog about it now, I WILL!"... kekeke.
[2] tamsim [hokien] means greedy.
